The birthday of a teacher at my school is tomorrow, so I decided to make her a treat. She is a total hippy and you can’t get more hippy than rainbow tie-dye cupcakes. It was awesome to see the look on her face when she cut the cupcake open- the expression I was looking for! You will be just as surprised when you cut yours too! The colors are so vibrant and don’t blend when they are baking. Anyone will love them.
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon of salt
2/3 cup granulated sugar
2 teaspoons of vanilla extract
1 1/2 sticks butter
1/2 cup milk
Beat eggs and sugar until blended. Then add vanilla and butter.
Whisk the other dry ingredients in a separate bowl. Add milk and dry
ingredients to egg mixture alternating. Once the batter is complete,
separate into 6 different bowls (or however many colors you want). Add a
different food coloring to each bowl and mix well until batter becomes the
color you want it to be. Line a 12 cup muffin tin with muffin liners and
add a dollop of each color with a spoon into the liner. Add only a tea-
spoon of each color and do not mix! The different colored batters will
even out and fill the whole liner once in the oven. Do this to all 12 cup-
cakes and bake for 18 minutes at 350*F.
